Delicious Keto Zone Lemon Curd with Coconut Whipped Cream

Ingredients:

  • 2 tablespoons finely grated lemon peel
  • 3 large eggs (organic and/or cage-free)
  • 2/3 cup fresh lemon juice (about 3 large lemons)
  • 2 tablespoons organic coconut oil
  • 2/3 cup Granular Erythritol

Instructions:

  1. Combine all ingredients in a saucepan over medium heat, stirring constantly with a whisk until thickened, about 3-5 minutes.
  2. Allow to cool. Cover and chill in refrigerator 2+ hours (the mixture will thicken as it cools). Yield: ~2 cups.

Lemon Curd can be stored in the refrigerator for up to 1 week and also freezes very well. Thaw in the refrigerator, and use within 1 week of thawing.

Can also be made with limes juice and peel, or orange juice and peel.

Coconut Whipped Cream:

Ingredients:

  • Refrigerated Canned Coconut Milk (needs to have been chilled 2+ hours)
  • 2 tablespoons Erythritol, optional)

Instructions:

  1. Using chilled, canned coconut milk, scoop out solid cream (reserve liquid for another use).
  2. Place cream in a bowl. Whip with a hand mixer until peaks are formed.
  3. If sweeter cream is desired, add Erythritol (or stevia), and whip to mix.

Serve Lemon Curd in cup or bowl with a dollop of cream on top.
