Keto Zone Spicy Grilled Chicken Foil Packets

Ingredients:

  • 6 boneless, skinless, organic chicken thighs or split breasts
  • 1 cup each of onion, broccoli, zucchini, and asparagus (chopped into 1/2-inch cubes as needed)
  • 2-3 tablespoons jerk seasoning, to taste (be careful, it can get spicy!)
  • 3 tablespoons melted organic coconut oil or MCT oil
  • cilantro, chopped
  • 2 limes
  • 1 avocado

Instructions:

  1. Prepare grill.
  2. Toss chicken, vegetables, jerk seasoning and oil on a sheet of foil.
  3. Form a foil packet, make sure to seal corners and edges.
  4. Grill over high heat, turning once, 25 minutes.
  5. Top with cilantro, avocado slices, and serve with lime wedges.

    I am really surprised that you would want people to use aluminum foil to cook in. I have been taught using aluminum for cooking is unhealthy. Now I am so confused!
