Ingredients:
1 1/2 cups organic shredded coconut
5 tablespoons low-carb sweetener
1 scoop Hydrolyzed Collagen Protein
1/2 teaspoon baking powder
1/2 teaspoon organic almond extract
2 pasture-raised/organic eggs, whites only
Instructions:
- Preheat oven to 325 degrees F.
- Add egg whites to a small bowl and whisk until soft peaks begin to form.
- In a separate bowl, combine dry ingredients and mix until well combined.
- Add egg whites and almond extract in to the dry ingredients and mix well.
- Cover a baking sheet with parchment paper.
- With a large spoon, scoop 9 dollops of the mixture and arrange on the baking sheet.
- Bake for 15 minutes or until macaroons begin to turn golden brown.
- Use a spatula to remove each macaroon from the baking sheet.
- Allow to cool for 5-10 minutes.
- Enjoy!
