Beyond Keto Thanksgiving Crustless Pumpkin Pie

Ingredients

  • 15 ounces organic pumpkin puree
  • 1/2 cup almond milk
  • 1/2 cup organic coconut milk (canned, use the thick portion)
  • 2 teaspoon real pure vanilla extract
  • 2 teaspoons Beyond Keto homemade pumpkin spice
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup almond flour
  • organic stevia powder equivalent to 1/2 cup sugar (see packaging)
  • 1 egg
  • 2 Tablespoon organic butter (melted) (optional)

Instructions

  1. Preheat your oven to 400 degree F. Grease a 9-inch round pie pan.
  2. Whisk all ingredients together in a large bowl until well-blended.
  3. Pour mixture into the prepared pan. Bake 35 minutes. Remove from oven.
  4. The pie will be gooey after baking. Allow it to cool completely before transferring uncovered to the fridge. Allow to “set” in fridge for at least 6 hours. Serve once firm.
