Keto Chicken Taco Lettuce Wrap

Unfortunately, most tacos are made with carb-laden tortillas comprised of inflammatory grains like corn and wheat that will definitely take you out of the Keto Zone!

Thankfully, however, there is an easy way to get the flavor and experience of tacos without the carbs!

These lettuce wrap chicken tacos use delicious marinated minced chicken in low-carb lettuce wraps.

They are super easy, extremely tasty, and totally versatile.

You can add any myriad of keto approved toppings ranging from cheese and sour cream to herbs and spices.

Serves: 4

Ingredients

2 pounds organic free-range chicken thighs, minced
2 cloves organic garlic, minced
2 tablespoons coconut aminos
2 tablespoons avocado oil
2 teaspoons sea salt
2 teaspoon organic cumin
1 teaspoon dried organic oregano
1 teaspoon chili powder
1 teaspoon ground coriander
1 head organic lettuce

Suggested toppings:

1/4 cup organic cilantro, chopped (optional)
1/2 onion, diced (optional)
Organic grass-fed cheese of choice, shredded (optional)
1 large avocado, sliced (optional)
Organic sour cream (optional)

Instructions

 

  1. Cut chicken thighs in to small chunks.
  2. Place chicken chunks and garlic cloves in to a food processor and pulse a few times until chicken and garlic is minced. Be careful not to over-process chicken.
  3. Once chicken and garlic is minced, combine with coconut aminos, 1 tablespoon avocado oil, sea salt, and spices in a glass dish with a lid or other closed container.
  4. Place in fridge and allow to marinate for anywhere from 2 to 12 hours.
  5. When ready to cook, heat up the other tablespoon of avocado oil in skillet over medium heat.
  6. Toss marinated chicken in to the skillet and sauté until cooked through, stirring frequently.
  7. While the chicken is cooking prepare your lettuce wraps by removing large leafs off the head of lettuce and arranging on plates to serve.
  8. Once chicken is cooked, distribute in to lettuce wraps.
  9. Finish with toppings of choice.
