Keto Zone Christmas Pecan Toffee
Ingredients
- 5 tablespoons butter (organic or grass-fed if possible)
- 1 1/2 cups pecans, chopped
- 1/2 cup granular erythritol (such as Swerve granular)
- 5 tablespoons heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 6 oz. sugar-free chocolate bar or chips (such as Lily’s sugar-free chocolate)
- 1/8 tsp cinnamon
Instructions
- Line a cookie sheet with foil and spray with nonstick cooking spray or coconut oil.
- Melt butter in a medium-sized saucepan over medium heat. Add 1 cup chopped pecans, and cook for about five minutes, until they are fragrant and toasted (stir continuously).
- Stir in cream, vanilla, sea salt, and erythritol.
- Stir and cook until thickened, about 6-8 minutes. If needed for thickening, increase heat to medium-high so that mixture bubbles, but make sure not to burn.
- Pour mixture onto lined cookie sheet.
- Place in refrigerator about 1/2-1 hour, until cool to the touch.
- Next, place chocolate in a microwavable dish (if using chocolate bars, break into small pieces). Melt for 30 seconds at a time, stirring between each interval, until melted. Stir in cinnamon. Pour over crust and spread evenly. Sprinkle 1/2 cup chopped pecans over the top.
- Place in freezer and freeze 1/2 hour, until hardened. Break apart into about 24 pieces and enjoy! Can be stored in a covered container in refrigerator 7-10 days or in freezer 6 months.
