Keto Zone Christmas Pecan Toffee

  • 5 tablespoons butter (organic or grass-fed if possible)
  • 1 1/2 cups pecans, chopped
  • 1/2 cup granular erythritol (such as Swerve granular)
  • 5 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 6 oz. sugar-free chocolate bar or chips (such as Lily’s sugar-free chocolate)
  • 1/8 tsp cinnamon

  1. Line a cookie sheet with foil and spray with nonstick cooking spray or coconut oil.
  2. Melt butter in a medium-sized saucepan over medium heat. Add 1 cup chopped pecans, and cook for about five minutes, until they are fragrant and toasted (stir continuously).
  3. Stir in cream, vanilla, sea salt, and erythritol.
  4. Stir and cook until thickened, about 6-8 minutes. If needed for thickening, increase heat to medium-high so that mixture bubbles, but make sure not to burn.
  5. Pour mixture onto lined cookie sheet.
  6. Place in refrigerator about 1/2-1 hour, until cool to the touch.
  7. Next, place chocolate in a microwavable dish (if using chocolate bars, break into small pieces). Melt for 30 seconds at a time, stirring between each interval, until melted. Stir in cinnamon. Pour over crust and spread evenly. Sprinkle 1/2 cup chopped pecans over the top.
  8. Place in freezer and freeze 1/2 hour, until hardened. Break apart into about 24 pieces and enjoy! Can be stored in a covered container in refrigerator 7-10 days or in freezer 6 months.

Health Benefits of Keto Zone Christmas Pecan Toffee

The 3 most health-benefiting ingredients in this recipe include:

  • Pecans
  • Cocao (in sugar-free chocolate)
  • Erythritol (Swerve)

Here’s what each offers:

Pecans are a wonderfully delicious nut and the star of our Christmas Pecan Toffee. Beyond flavor, they are also one of the healthiest. Pecans:

  • Support bone health, especially in women (1). They are a good source of manganese, copper, and zinc, minerals known to promote bone density and health.
  • Improve brain health, especially in those who are seeking treatment after alcohol abuse (2). Pecan’s thiamine helps the brain recover and repair.
  • Reduce free radical damage and brain degradation by neutralizing free radicals, especially in degenerative diseases like Parkinson’s and Alzheimer’s. Pecans’ nutrients help improve brain dopamine and galactose pathways in patients with these diseases.
  • Support heart health by promoting healthy blood pressure levels and improved cholesterol (3). Pecans provide plant sterols, antioxidants which can reduce oxidation of LDL cholesterol, and healthy fats to support heart health (4).

Cocoa (or in an even better, raw form, cacao) give the gift of amazing flavor and health. It is truly a superfood. And, when you choose chocolate products that use it (the more cocoa the better), you’re consuming a high-antioxidant, disease-fighting food.

In fact, cocoa contains more than 300 different antioxidant chemical compounds. It is actually 20 times more powerful than the antioxidant power of blueberries. High-cacao chocolate has up to 15 mmol of antioxidants per 3.5 ounces (100 grams).  Again, this is much more than high-antioxidant foods, such as blueberries and raspberries.

What’s more, the older the cocoa the better. Cocoa’s antioxidants somehow become more powerful and stable with time (5)!

These antioxidants work to provide many health benefits in the body. Cacao can reduce stress, improve blood pressure, supports brain health, and much more. To learn about cacao’s effect on whole-body health, check out this Hot Chocolate Recipe and top 10 benefits.

Erythritol’s benefit isn’t so much in what it provides, but what it allows you to omit: sugar. And, it’s wonderful. It tastes like sugar, cooks and provides texture like sugar, and does all of this for 0 grams of net carbs.

Erythritol is both a man-made and naturally occurring sweetener.  While sugar has 4 grams of carbs and 16 calories for every teaspoon, erythritol has o net grams of carbohydrates since our small intestines absorb it quickly and eliminate it through urine.
