Ingredients

2 lbs lamb shoulder cut in bite-sized pieces
1 organic yellow onion, cut in wedges
1 organic tomato, peeled, seeded, and chopped
1 tablespoon sea salt
1 teaspoon organic black pepper
2 organic bay leaves
1 ¼ cups organic tomato puree
1 teaspoon apple cider vinegar
½ cup organic parsley, finely chopped
1 ¼ lbs fresh organic green beans
1 teaspoon grass-fed butter or ghee

 

Instructions

  1. Use a sharp knife to cut lamb into about 1/2 inch pieces.
  2. Melt butter in a large saucepan over medium heat.
  3. Add cut lamb to the saucepan and sear, stirring frequently, for about 2 minutes.
  4. Once meat is seared on all sides add in onion and lightly cook, stirring frequently.
  5. Once onion is translucent, fill pan with water, enough to cover meat and onions.
  6. Add in salt, pepper, bay leaves and 1/4 cup parsley.
  7. Bring water to a boil.
  8. Cover the pan and allow it to simmer over medium-low heat for about 2 hours.
  9. After 2 hours, add in tomato puree, chopped tomatoes, apple cider vinegar, and green beans.
  10. Stir to combine.
  11. Boil for another 3-5 minutes.
  12. Remove stew from heat and top with remaining 1/4 cup fresh chopped parsley.
  13. Serve and enjoy!
