Have you ever had cottage pie?

It is a variation on the classic Irish dish called shepherd’s pie. However, while shepherd’s pie is made with minced lamb, cottage pie uses minced beef.

While delicious, these dishes are not normally keto friendly!

These beloved Irish recipes are traditionally topped with a heaping serving of mashed potatoes. But for those of us looking to lose weight and improve our heath with a ketogenic diet, potatoes are not on the menu!

That is why we are sharing this keto-friendly version of this nourishing and warming Irish dish.

Cauliflower mash replaces the potatoes. Cauliflower is full of gut-friendly fiber as well as a whole host of vitamins and minerals. And the best part is that cauliflower is very low-carb.

This means you can enjoy your cottage pie without raising your blood sugar and getting knocked out of the Keto Zone!

 

Ingredients

1 1/2 pounds organic cauliflower (frozen or fresh), chopped in florets
2 pounds grass-fed ground beef
1/2 cup organic sour cream
1 organic/pasture-raised egg
7 tablespoons grass-fed butter, melted
1/2 leek, finely chopped
1/2 cup organic cheddar cheese, shredded
3 tablespoons organic coconut aminos
1/4 cup fresh organic parsley, chopped
1 teaspoon onion powder
1/2 teaspoon sea salt
1/4 teaspoon organic black pepper, ground

 

Instructions

  1. Preheat the oven to 400 F.
  2. Steam cauliflower florets until cooked through.
  3. In a large mixing bowl, mash the cauliflower to desired consistency.
  4. Add in sour cream, egg, 6 tablespoons of butter, and leek.
  5. Mix until well combined.
  6. Add in 1/4 cup cheese and continue to mix until well combined.
  7. Season with salt and pepper.
  8. Melt remaining 1 tablespoon of butter in a large skillet over medium heat.
  9. Add the ground meat and coconut aminos.
  10. Cook, stirring occasionally, until thoroughly browned.
  11. In a large baking dish, spread meat out over the bottom in an even layer.
  12. Top the meat with the cauliflower mash in an even layer.
  13. Add the remaining 1/4 cup of cheese on top of the mash.
  14. Place baking dish in the oven.
  15. Bake for 20 minutes or until golden brown.
  16. Remove from the oven and top with fresh chopped parsley.
  17. Serve and enjoy!

      I believe it’s another name for soy sauce. May be gluten free and healthier then the traditional soy sauce

    I made this following the Instructions and everyone loved it. Decided to make another adding spinach in the meet, for a keto friendly vegtable, and bake the cauliflower, as part of the feedback I received. Reading through the ingredients for a shopping list I realized there is onion powder which I haven’t stocked for quite awhile. I wondered what I’d substituted but then realized the instructions never mention adding onion powder. Seems fine with grass-fed beef without the onion powder, or was this meant for the cauliflower? Good regardless.
