Avocados are loaded with heart-healthy monounsaturated fat as well as fiber and minerals like potassium.

Eggs are one of the most nutrient dense foods on the planet with protein, healthy fats, fat-soluble vitamins, and minerals.

These baked avocado eggs are sure to keep you full and satiated without any carbs so you can keep burning fat in the Keto Zone all day!

INGREDIENTS

2 large organic avocados
4 pasture-raised/organic eggs
1 limes
2 tablespoons organic cilantro, chopped
Sea salt, to taste
Black pepper, to taste
4 tablespoons grass-fed cheese, optional

INSTRUCTIONS

  1. Preheat oven to 450°F.
  2. Cut the avocados in half.
  3. Remove the pit and discard.
  4. Use a spoon to scrape out enough room in the avocado to house an egg. (excess avocado flesh may be eaten)
  5. Add a squeeze of lime juice over each avocado and then top with salt and pepper.
  6. On baking sheet, place each seasoned avocado half.
  7. Carefully break one whole egg into the center of each avocado half.
  8. It is okay if egg white spills over the side, just keep the yolk from breaking.
  9. Place avocados in the oven and bake for about 10 minutes or until the whites are cooked but the yolk is still runny.
  10. Remove from oven and garnish with cilantro, more salt and pepper, and cheese, if desired.
  11. Serve warm and enjoy!

What if you put them in a muffin tin or just use cupcake paper; and will save any egg. ? I think I’ll try that incase they run over. Sounds interesting and will try soon…

It was very difficult to read the recipe on my IPhone as an adult just wouldn’t go & there was no way of getting rid of it, so I closed the page & re-opened to type this message. Thankyou for recipe but I am sick of subliminal advertising.

Thank you for showing me how to get my health in better condition. I’m everything that Dr. Colbert has talked about of being sluggish not feeling good , burning feet etc. I’m over weight but not extremely bad around 195 , 5’ 8 inches, but I’m miserable! I know its from not eating right ! I pray all of the time to understand the food line and tried everything, but always fail. I really appreciate this site and hope I can follow it through and stay focused on changing my life to better health ! I just started it recently. People are trying to scare me of following the Keto Diet already, but I need help for my health. Thank you for helping people like us , I thank the lord for your care and concerns of others . God bless you , Sherry
