Keto Zone Berry Popsicle Fat Bombs

Ingredients:

  • 1 1/2 cups fresh or frozen raspberries, blueberries or strawberries (hulled and chopped). If frozen, thaw after measuring.
  • 1 1/4 cups heavy whipping cream
  • 3/4 cup cream cheese
  • 1/4 cup + 2 tablespoons powdered erythritol like swerve
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons fresh lemon juice or lime juice

Instructions:

Place berries in a food processor and pulse a few times until in small chunks.

Spoon out 1/2 cup berries and set aside.
Add all remaining ingredients to berries.

Process until completely combined and creamy.

Transfer to a bowl and stir in the reserved 1/2 cup of berries.

Pour or spoon creamed mixture into 8 popsicle molds.

If you don’t have popsicle molds, you can use 16 ice cube cubes. Serves 8.
