Keto Parmesan Zucchini Fritters

Ingredients

2 organic zucchinis, peeled and shredded
3/4 cup organic parmesan cheese, grated
1/4 cup organic blanched almond flour
2 organic eggs
2-3 tablespoons grass-fed ghee
1 teaspoon sea salt
1/2 teaspoon black pepper

 

Instructions

  1. Peel your zucchini, chop in half long ways, and scoop out the seeds.
  2. Grate the peeled zucchini in to a large thin washcloth or cheesecloth.
  3. Squeeze to remove as much water as possible.
  4. In a large bowl, combine the zucchini with the remaining ingredients and mix until well combined.
  5. Allow mixture to se for 5 to 10 minutes before continuing.
  6. Add 1 tablespoon of ghee to a frying pan over medium heat.
  7. Once ghee has melted, scoop a heaping tablespoon of fritter batter on to the pan.
  8. Gently push to flatten the fritter.
  9. Add as many fritters on to your pan as will easily fit.
    After about 3 minutes begin to check the underside of the fritters using a spatula.
  10. Once the fritters are golden brown flip and cook for another 3-4 minutes on the second side until golden brown.
  11. Remove fritters from the pan and set aside on a plate covered in a layer of paper towels.
  12. Serve immediately.
  13. Enjoy!
