Easy Keto Shrimp Scampi

Ingredients

2 tbsp grass-fed butter
1 lb wild-caught shrimp, peeled and deveined
4 cloves organic garlic minced
1 tsp dried organic thyme
1/2 tsp organic red chili pepper flakes
1/4 cup organic chicken broth
1 organic lemon, juiced
1⁄2 tsp sea salt
1/2 tsp ground organic black pepper
1 1/2 pounds organic zucchini noodles
2 tbsp grass-fed/organic parmesan, freshly grated
2 tbsp fresh organic parsley leaves, chopped

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add shrimp, garlic, thyme and red pepper flakes.
  3. Cook, stirring occasionally, until shrimp begins to turn pink, about 2 to 3 minutes.
  4. Add chicken broth and lemon juice.
  5. Season with salt and pepper.
  6. Bring to a simmer.
  7. Stir in the zucchini noodles and cook for an additional 3 to 5 minutes.
  8. Garnish with Parmesan and parsley.
  9. Serve Immediately
