Keto Zone Cobb Salad

Our Keto Zone cobb salad recipe is loaded with flavor and nutrition.

Organic iceberg lettuce serves as the foundation for this delicious and nutrient dense dish.

Loaded on top of the lettuce are hard boiled eggs, organic turkey bacon, baked chicken, avocado, tomato, blue cheese, and home-made ranch dressing!

This meal is loaded with healthy fats and protein and only has 6 grams of net carbs!

You can add or subtract ingredients as you like. Possible additions include: red onion, chives, mushrooms, and garlic.

Ingredients

2 organic/pasture-raised eggs, hard boiled
4 strips of organic turkey bacon, baked
2 organic chicken boneless skinless chicken thighs, baked and cut
1 tablespoon organic olive oil
1/4 cup organic blue cheese
1 organic avocado
1 organic tomato
3/4 cup organic iceberg lettuce
1/2 teaspoon sea salt
1/4 teaspoon organic ground black pepper
3 tablespoons keto mayonnaise
2 tablespoons filtered water
1 tablespoon ranch seasoning

 

Instructions

  1. Preheat the oven to 400 F.
  2. Lightly coat chicken thighs with olive oil.
  3. Place chicken thighs in the oven to cook for 25 minutes.
  4. Arrange turkey bacon on a baking tray and place in the oven to cook for 20 minutes or until cooked to desired doneness.
  5. While the turkey bacon is cooking, prepare the dressing by combining mayonnaise, water, and ranch seasoning in a small mixing bowl. Whisk ingredients until well combined.
  6. Next, bring a medium pot of water to a rolling boil.
  7. Place eggs in the boiling water and boil for about 8-10 minutes.
  8. While eggs are boiling prepare a a bowl of ice water.
  9. Once eggs are cooked, quickly submerge them in the ice water to cool.
  10. Once eggs are cooled, peel off the shell and chop eggs in to bite-sized pieces.
  11. Once chicken and turkey bacon are cooked, remove from oven and cut in to bite-sized pieces.
  12. Cut tomato and avocado into bite-sized pieces.
  13. Arrange iceberg lettuce in to two salad bowls.
  14. Distribute chicken and bacon over the lettuce.
  15. Add tomato and avocado on top of the chicken and turkey bacon.
  16. Drizzle with dressing and top with blue cheese crumbles.
  17. Season with salt and pepper.
  18. Serve and enjoy!
