Keto Comfort Food: Pan Fried Chicken Thighs

Who doesn’t love fried chicken?

Unfortunately, today most friend chicken is made by deep frying rancid and oxidized oils such as canola, soy, corn, grape seed, and vegetable oil.

But this is not how it was traditionally done!

Your ancestors probably fried food using butter, tallow, lard or some other high quality traditional cooking oil. These fats are not only more nutritious but are also much more stable under high heat.

Another problem with fried chicken is that it is usually breaded with wheat flour, which will definitely take you out of the Keto Zone!

Most wheat flour is made from low-quality GMO plants that have been doused with glyphosate. This is not only bad for your health, but bad for the environment as well.

That’s why this keto comfort food recipe uses low carb almond and coconut flour to get the “breaded” chicken experience without the extra carbs!

Ingredients

  • 1.5 lbs organic chicken thighs, pounded to about 1/2″ thickness
  • 1 cup blanched almond and/or coconut flour
  • 2 tsp sea salt
  • 1/8 tsp organic black pepper
  • 1 1/2 teaspoons organic dried oregano
  • 1 teaspoon organic dried marjoram
  • 1 teaspoon organic dried thyme
  • 1/2 teaspoon organic dried basil
  • 1/2 teaspoon organic dried rosemary
  • 1/2 teaspoon organic dried sage
  • 1 tsp organic onion powder
  • 1/2 tsp organic garlic powder
  • 2 free-range eggs, whisked
  • 4 tbsp cooking oil (grass-fed ghee, coconut oil, tallow, or lard)

Instructions

  1. In A medium bowl, mix dry ingredients.
  2. Whisk the egg.
  3. Heat a large skillet over medium heat with 2 tablespoons of cooking oil (have extra 2 tbsp available in case more is needed).
  4. Dip the first thigh in egg, drain off excess, and then coat with dry ingredients.
  5. Place the coated thigh in the pan, and repeat with each piece of chicken.
  6. Cook on each side until golden brown.
  7. Set finished thighs on a plate covered in a paper towel to absorb excess cooking oil.
  8. Plate and serve immediately.

  1. this is delicious but had to finish cooking in microwave and crust did not stay on very well. could you bake this chicken recipe?
