Ingredients
Muffins:
1/2 cup grass-fed butter, melted
1/2 cup erythritol powder
4 pasture-raised eggs
3 tablespoons organic lemon juice
1 tablespoon organic lemon zest
1 1/2 cup blanched almond flour
1/2 cup coconut flour
3 tablespoons Living Chia Seeds
2 teaspoons baking powder
1/4 teaspoon arrowroot powder
1/2 teaspoon vanilla extract
1 cup organic sour cream, full fat
1/4 teaspoon sea salt
Glaze:
1/2 cup erythritol powder
3 tablespoons organic lemon juice
2 tablespoons grass-fed butter, melted
Instructions
- Preheat the oven to 350 F.
- In a large mixing bowl, combine the melted butter, eggs, sour cream, and lemon juice.
- Whisk until well-combined.
- Add the rest of the ingredients and continue to mix until well combined.
- Pour the batter evenly in to a muffin tin.
- Place in the oven and bake for 35 minutes.
- To make the glaze, combine the erythritol, butter, and lemon juice in a small mixing bowl.
- Whisk until well combined.
- Once muffins have baked, remove from oven and drizzle with lemon glaze.
