Yields 3-4 servings
Ingredients:
2 tsp organic coconut oil or olive oil
1 organic onion, diced
3 organic cloves garlic, minced
1 cup chopped organic carrots
2 cups chopped organic broccoli florets
5 cups organic vegetable broth
3 tsp grated peeled fresh ginger
1/2 tsp ground turmeric
2 tsp ground cumin
1/8 tsp ground cinnamon
Sea salt and black pepper to taste
Fresh lemon juice

Do you have to use cinnamon to get the health benefit? I love it but not in savory. And cloves? 🙂
Susan, you can certainly substitute the spices to your liking!
I used several substitutions but the final product was delicious! I cut the recipe in half for the first trial. I used celery instead of broccoli, baby spinach instead of kale, and the organic garlic that was already minced. I cooked according to the instructions. However, after I served my bowl, I then added the baby spinach to my individual serving. The steam from the soup wilted the spinach just fine. Now when i reheat, I will not have soggy spinach! 🙂
