1/2 cup organic coconut flour
1/2 cup hydrolyzed collagen protein powder
1/4 cup keto sweetener 
6 pasture-raised/organic eggs
1/2 cup organic pumpkin, pureed
1/4 cup grass-fed butter
1/2 cup full fat organic coconut milk
2 teaspoons organic cinnamon powder
1 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon organic ginger powder
1/4 teaspoon organic clove powder
1/2 teaspoon organic vanilla extract
2 tablespoons organic coconut oil or grass-fed butter for the frying pan



  1. Combine coconut flour, protein powder, sweetener, baking powder, cinnamon, salt, ginger, and cloves in a large mixing bowl.
  2. Whisk until well combined.
  3. Add in the pureed pumpkin, eggs, melted butter, coconut milk, and vanilla extract.
  4. Continue to whisk until well combined.
  5. Melt coconut oil or butter in a large skillet.
  6. When pan is preheated, add about two tablespoons of batter in to the skillet to form a pancake.
  7. Fill the skillet with as many pancakes as it will hold.
  8. Cook pancakes until they begin to set around the edges, about 5-7 minutes.
  9. Carefully flip each pancake.
  10. Continue to cook until both sides are golden brown.
  11. Repeat until batter is used up.
  12. Serve and enjoy!
