Spiced Keto Christmas Cookies

Being on the Keto Zone Diet does not mean you have to give up on holiday cookies!

In fact, it can be quite easy and delicious to make keto friendly cookies that the whole family will love.

These cookies are gluten-free, dairy-free, sugar-free, and full of flavor!

With low-glycemic sweeteners such as stevia, xylitol, erythritol, or monkfruit used in place of sugar, these cookies taste even better than what you are used to!

The only way anyone will be able to tell a difference is that they will feel way better after eating these than they do after eating a normal cookie.

Now you can indulge in holiday treats while still burning fat in the Keto Zone!

 

Ingredients

1 whole pasture-raised egg
1⁄4 cup organic coconut oil softened
2 tablespoons organic nut milk (coconut, almond, or hemp)
1 1⁄2 cup organic almond flour
1⁄2 cup sugar-free sweetener
1 tablespoon grass-fed beef gelatin
1 teaspoon organic vanilla powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon sea salt
3⁄4 cup grated organic zucchini
1 tsp organic cinnamon
1/2 tsp organic ginger
1/2 tsp organic nutmeg
1/4 tsp organic cardamom
1/4 tsp organic clove

Instructions

  1. Preheat the oven to 325° F.
  2. In a medium bowl, whisk together the egg, oil, and milk.
  3. In a second bowl, combine the flour, sweetener, gelatin, vanilla, baking soda, salt, and spices.
  4. Pour dry mixture into the wet mixture. Mix a few times to combine.
  5. Fold in the zucchini.
  6. Coat a cutting board with a dash of extra flour.
  7. Roll dough out into a sheet about 1/4 – 1/2 inch thick.
  8. Use a cookie cutter of choice to cut out cookie shapes.
  9. Place cookies on a baking sheet lined with parchment paper.
  10. Bake for 15 minutes, or until golden brown.
  11. Transfer to a cooling rack.
  12. Allow to cool completely.
  13. Enjoy!

  1. I appreciate the information about canola oil. I’ve been using coconut oil with Ghee, a product I was introduced to by my health coach about a year ago. It has a buttery taste, and can be used in many ways and in many dishes. Recently my husband started using it, too.
