Keto Zone Chocolate Chip Cookies

Ingredients
1/2 cup salted butter (softened, organic or free-range in possible)
3/4 cup Erythritol or equivalent of another Keto sweetener
1 teaspoon real vanilla
1 large egg (organic or free-range in possible)
1 1/2 cups almond flour
1/2 teaspoon baking powder
1/2 teaspoon xanthan gum (optional)*
1/4 teaspoon salt
3/4 cup 70%+ cacao (can be a chopped bar) OR sugar-free chocolate chips

Instructions

  1. Preheat the oven to 355 deg F. Prepare a baking sheet by greasing with oil, adding parchment paper, or lining with a silicone mat.
  2. Soften butter in the microwave.
  3. Add the butter and sweetener to a medium mixing bowl. Beat until combined. Add the vanilla and the egg. Beat on low for 15 seconds (don’t overbeat).
  4. Add the almond flour, baking powder, xanthan gum, and salt. Beat until well combined.
  5. Shape the dough together into a mixture. Remove from bowl, and knead in chocolate chips with your hands.
  6. Press the dough together and remove it from the bowl. Knead in the chocolate chips with your
    hands.
  7. Divide the dough into 12 balls (about one tablespoon each) and place on a prepared baking sheet.
  8. Bake for 10 minutes. If you’ve omitted xantham gum, reduce baking time to just 8 minutes.
  9. Allow to cool and enjoy! They can be kept in an airtight container for up to 7 days.
