Delicious Frosted Keto Christmas Cookies (Only 1 Gram Net Carbs)

Frosted Keto Christmas Cookies

Ingredients:

  • 8 tablespoons grass-fed butter, soft
  • 2 eggs, free-range and organic if possible
  • 8 drops liquid stevia (or ~1/4 teaspoon powdered)
  • 1 teaspoon real vanilla
  • 1/8 teaspoon almond extract
  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 cup granular erythritol
  • 1 pinch of sea salt
  • powdered erythritol (frosting)
  • unsweetened almond milk (frosting)
  • all-natural plant-based food colorings (optional) (found online and contain no harmful dyes – we used the Supernatural Brand)
 Instructions:
  1.  Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper
  2. Place butter, eggs, stevia, vanilla, and almond extract well in a medium bowl.  Mix well with electric hand beaters.
  3. Stir flour, baking powder, granular erythritol, and sea salt together in a large bowl.
  4. Pour egg mixture into dry ingredient mix and continue mixing with hand beaters.
  5. Cover tightly and allow the dough to cool for 60 minutes in the refrigerator.
  6. Once well-cooled, form 1-inch balls with the dough, and roll each onto the lined baking sheet. If they are not completely flat, press down to flatten (it’s also okay to have taller cookies).
  7. Bake for 12-14 minutes if flat, and 15-18 minutes if taller. Allow cookies to cool on wire rack. Yield 40 cookies.
  8. Meanwhile, make the frosting: Place 1/4 cup powdered erythritol in a small bowl. Pour in just about 2 teaspoons almond milk, or until it’s at the desired consistency. Leave frosting white or add food coloring if desired. Frost cooled cookies. (Depending on the amount of frosting applied to each cookie and consistency, you may have to make more frosting.)

Nutrition Information (1 cookie, entire recipe yields 40 cookies) 27 calories, 3 grams fat, 1 gram carbohydrates, 0 grams fiber, (1 gram net carbs), 0 grams protein.

  1. Made these cookies for Christmas. Love the taste!
    They spread a lot and then once removed from the over they fell apart. The second half I allowed to cool on the cookie sheet thinking that would help them stay together but they also crumbled. We ate them with a spoon lol
