Often, when people think about a keto diet, they picture a bunch of bacon, steak, and butter.
While these are great keto-friendly foods, the bulk of a healthy ketogenic diet is actually based on low-carb vegetables such as leafy greens (kale, spinach, collards) and alliums (onions, garlic, shallots).
But it still doesn’t hurt to have some bacon!
That’s why this recipe combines all of these ingredients together.
These bacon braised collard greens are not only incredibly delicious ketogenic meal, but they are also unbelievably easy to make. Everything is cooked in a single pot and can be ready to eat in less than an hour!
This dish is a wonderful side dish, potluck contribution, or can even be eaten as an entire meal by itself.

1/2 pound organic bacon, diced
6 organic garlic cloves, chopped
2 large organic shallots, chopped
2 large bunches of collard greens, stems removed and roughly chopped
1 1/2 teaspoons fine sea salt
2 cups bone broth
1 tablespoon organic apple cider vinegar
