Keto Zone No-Bake Christmas Pecan Toffee

Keto Zone Christmas Pecan Toffee

Ingredients

  • 5 tablespoons butter (organic or grass-fed if possible)
  • 1 1/2 cups pecans, chopped
  • 1/2 cup granular erythritol (such as Swerve granular)
  • 5 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 6 oz. sugar-free chocolate bar or chips (such as Lily’s sugar-free chocolate)
  • 1/8 tsp cinnamon

Instructions

  1. Line a cookie sheet with foil and spray with nonstick cooking spray or coconut oil.
  2. Melt butter in a medium-sized saucepan over medium heat. Add 1 cup chopped pecans, and cook for about five minutes, until they are fragrant and toasted (stir continuously).
  3. Stir in cream, vanilla, sea salt, and erythritol.
  4. Stir and cook until thickened, about 6-8 minutes. If needed for thickening, increase heat to medium-high so that mixture bubbles, but make sure not to burn.
  5. Pour mixture onto lined cookie sheet.
  6. Place in refrigerator about 1/2-1 hour, until cool to the touch.
  7. Next, place chocolate in a microwavable dish (if using chocolate bars, break into small pieces). Melt for 30 seconds at a time, stirring between each interval, until melted. Stir in cinnamon. Pour over crust and spread evenly. Sprinkle 1/2 cup chopped pecans over the top.
  8. Place in freezer and freeze 1/2 hour, until hardened. Break apart into about 24 pieces and enjoy! Can be stored in a covered container in refrigerator 7-10 days or in freezer 6 months.
